Matt's Action Cam: Q6 Cooks Southern Cornbread Dressing

Southern Cornbread Dressing:
Sharon Johnston (Family Recipe)

Ingredients:
3 eggs
2 cups crumbled cornbread
3 cups turkey or chicken stock
1 1/2 cubed seasoned stuffing
1/2 cup melted butter
2 onions (finely chopped)
3 stalks celery (finely chopped)
2 tablespoons chopped parsley
1 teaspoon salt
1 teaspoon sage

Optional additions:
1 to 2lbs country or Jimmy Dean sausage cooked and crumbled
1 to 2lbs sauteed and diced mushrooms

Beat eggs slightly. Combine other ingredients and add to eggs.  Bake at 325-350 degrees for 45-60 minutes.
Baking time depends on whether you like dressing dry or moist.
My family likes it moist.

Tip: Bake cornbread one or two days before making dressing.

Cornbread recipe on Quaker corn meal box:
1 1/4 cups all-purpose flour
3/4 cup Quaker Corn meal (Sharon uses 1 cup)
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk or buttermilk
1/4 cup vegetable oil
1 egg beaten (Sharon uses 2 eggs)
Bake at 400 degrees for 20 to 25 minutes
