Curried sweet potato salad
- 4 large sweet potatoes, cooked until just done
- 1 ½ pounds Yukon gold potatoes, cooked until just done
*Do not overcook potatoes!!
**Chill potatoes overnight. Peel and dice potatoes on the next day.
- 1 large red onion, sliced thin
- 2 teaspoons salt
- 1 clove garlic, minced
- 1 jalapeno pepper, seeded & minced
- ¼ cup fresh lemon juice
- 1 cup mayonnaise
- 1 Tablespoon curry powder
- ¼ fresh parsley, finely chopped
- ¼ teaspoon white pepper
Mix all ingredients with potatoes. Chill before serving.
